TASTY HYDERABADI VEG DUM BIRYANI 


 Ingredients:

 Basmati Rice ---350 gms 
 Potatoes ---200 gms
 Carrots---200 gms 
 Onions---100 gms 
 Green Chilies---FOUR 
 Ginger---30 gms 
 Garlic ---20 gms 
 Turmeric Powder---1/2 tsp
 Red Chili Powder---1 tsp 
 Curd---1 cup 
 Saffron ---1 tsp
 Milk ---2 tbsp
 Pudina leaves---1/3 cup  
 Coriander Leaves---1/3 cup  
 Rose Water ---4 tsp 
 Cashewnuts ---50 gms
 Almonds ---50 gms
 Raisins---25 gms 
 Ghee ---120 gms
 Salt To taste



hyderabad biryani preparation:

Clean and soak the basmati rice in water for thirty minutes. after that remove the water. Put the soaked rice, add water and add half of garam masala  taken and add salt in a pressure cooker.

Cook until the rice is done.

Chop the potatoes and carrots, onions and green chillies.

Clean ginger and garlic and cut finely. Cut the coriander and pudina leaves.
Soak the nuts in water for thirty minutes.

beat the curd and divide into two.

Melt saffron in heated milk and add it to one part of the curd.

heat ghee and add the remaining garam masala and sauce over warm heat till it starts to burst slightly.

Add onions till they change to golden brown. Then add green chillies,garlic , ginger, and then mix for a minute.

Add turmeric and chilli powder, heat for thirty seconds and add the sliced vegetables and mix for about a minute.

Add other part of plain curd and mix and add over half  cup of waterand boil it and then reduce heat till the vegetables are cooked.

Add the cashews and almonds when the vegetables are cooked.

In the cooker with the cooked vegetables, mix little saffron curd, coriander, pudina

Then put half of the boiled rice on top of it and mix the remaining saffron curd, coriander, pudina and put the remaining rice on top of it.

seal it with a wet cloth and close it with a tight lid for about 20 minutes.

Hot vegetable hyderabadi dum biryani is ready.
